Fall Flowers

White goats grazing near yellow goldenrodBefore the fall foliage arrives with its spray of colors, fields and roadsides come alive with fall flowers. In addition to the bursts of color, these flowers are vital to bees and other pollinators.

As bee keepers several years ago, one of the things we learned was that honey made later in the year looked and tasted different than it did in the Spring. It was darker and seemed to have a richer flavor. At times I thought that the flavor was that of the smell when standing next to the fields of wildflowers. Thankfully, I didn’t notice what some have described as the smell of wet socks, in Fall honey!
